Choc Banana Bread
This is my easy go-to banana bread recipe that I make on repeat. After trialing many different recipes, this is the one! I use olive oil instead of butter purely because I can’t be bothered melting the butter first. I’ve found the gluten free option made with almond meal + organic brown rice flour is my favourite - the texture was perfect. I can’t always find brown rice flour so organic spelt is my next preference and works a treat. Hope you enjoy.
Ingredients:
- 3-4 ripe bananas
- 2 eggs
- 2 tbsp extra virgin olive oil (or melted grass fed butter)
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 1 cup almond meal
- 1 cup organic brown rice flour or organic spelt flour
- 1/2 tsp baking soda
- 1 tsp cinnamon
- pinch of salt
- 1/2 cup chocolate chips (Loco Love or Pana Organic milk or dark)
Method:
Heat oven to 175c, get your loaf tin ready.
Mash bananas and mix all wet ingredients together.
Add in almond meal, flour, baking soda, cinnamon, salt and mix really well.
Stir through chocolate chips.
Pour batter into lined loaf tin.
Bake for 50 mins, let it cool before cutting into it.
Enjoy warmed with a generous amount of salted, grass fed butter.
